Embark on a delectable tasting journey as our expert cheese pro introduces you to a carefully curated selection of five exquisite cheeses and pairings. Explore tasting notes, cheese styles, and receive valuable pairing recommendations in this BYOB class.
In collaboration with the renowned cheese storage product brand, Formaticum, this class will also provide you with invaluable insights and practical tips on how to extend the life of your favorite cheeses and elevate your cheese serving game. Emilia D'Albero, a seasoned cheese expert from Formaticum, will be on hand to advise you on the best ways to care for your cheese at home, ensuring its freshness and flavor are preserved. They'll fill us in on the secrets of cheese storage, including best temperatures, wrapping techniques and so much more.
AND as a special treat, all participants will leave with a few of Formaticum's best-selling products to help enhance your cheese journey at home.

About Emilia D'Albero:
Emilia D’Albero (she/they) is an American Cheese Society Certified Cheese Professional and a national champion cheesemonger with over 10 years of experience in cheese education and specialty food. After earning a BA in Italian Studies from Montclair State University, Emilia went on to manage Eataly’s cooking school & private events program before picking up a knife. Specializing in Italian cheese & charcuterie, she has worked behind some of NYC’s largest and most reputable cheese counters, and taught cheese and pairing classes all over the country for organizations like Culture Magazine, the Campari Academy, Eataly, the French Cheese Board, local breweries, and many private clients. Emilia is also a Cheesemonger Invitational champion & finalist and spent the pandemic years as the Cheese Buyer for the woman-owned Brooklyn specialty grocer Greene Grape Provisions, working with local purveyors and traveling the USA and Europe visiting producers in order to curate one of NYC’s most impressive cut-to-order cheese and charcuterie selections. Emilia is currently the National Sales & Marketing Manager for Formaticum and is committed to educating cheese professionals and consumers alike about proper cheese care and maintenance. She is also credited with the invention of “CheeseTok” and creates cheese education content on her popular TikTok account @punkrockparmigiano.

- All public classes are BYOB and open only to adults 21+. This class will take place at the brand new PCS Classroom, click here for more info about the space.
- In order to receive a full refund or reschedule, cancellations must be made 24 hours prior to the scheduled event time.
- This page will only show the amount of tickets which are still available for purchase. For example, if you are only able to buy 1 ticket then that means only one seat remains in class.
- If you are purchasing tickets for a group of 6 or more, please consider booking a private event with us instead.
